    I agree that it is better to avoid it all together, but I have heard more than once of bubblegum off flavors caused by hot temperatures fading over time.

    All of the fermentable sugars are gone already so there is nothing left for new yeast to consume. If off flavors occur because of the high fermentation temperature you can always let the beer have ample time to age and they should settle out eventually.

    Yeah, I know. Like I said, I was an idiot on this one. I usually keep at least one packet of dry yeast on hand for emergencies (IE I drop my starter or something crazy). This time I simply found myself with very limited options so I did what I could with the time that I had.

    Yeah, I figured about as much. I am actually curious what kind of crazy off flavors this may give me with the almost monumental under-pitch I gave it. For the record one of them is now starting to krausen. It started just about under what the 30 hour mark should be.

    I thought the same but new yeast rafts are forming an dropping to the bottom then rising back up. Never had this issue with pacman before.

    Let me rephrase that, if blow off tubing gives you an issue for some reason, just use normal tubing over the inner tube of your airlock.
