I have this in my primary now, been in there close to two weeks. Smells great. The kit provided three packets of Columbus hops, one for bittering, one for flavor and one for aroma. I can't recall the exact amounts in each.

This. Haha. From what I understand, there's a diminishing return once you start going over 100+ IBU's. Too bad, because death by hops is how I'd like to go. In unrelated news, death by hops might be a great name for a brew.

Using a 1214 starter, I've reached FG on a 1.082 in 9 days, so I think 3 weeks is plenty of time. I'd be wary of switching yeasts at this point... I definitely think it will affect your taste. Is there any way you can get your hands on more 1214?

Would love to see the winning design on here when it's all said and done.

Being stationed overseas, I've had my share of them. Personally I like them. As a hop head I do lean on IPA's and the like, but I wouldn't consider them garbage. And I recall places in Bulgaria where Stella was the only beer you could get besides the crap they sold in plastic 2 liter bottles.

I'll respectfully disagree. While I have sought out some of my favorite breweries, seeing one I'm not familiar with (particularly when traveling) makes me hope I've stumbled upon a new and undiscovered gem!

I'll second that. But honestly if you ever get the chance to try a Guinness in Dublin, don't miss it. I love Guinness personally, but it's not really a drink that seems to travel well.

Sounds like an interesting idea boomtown. I'm fairly new at this too and creating new recipes is a bit beyond my own expertise as well, but what you propose sounds interesting. Hate to say it, but I think in occasions such as these, the best way to do it is just give it a go. That being said...
