    Local shop giving away wort -what would you do with it

    Heat the wort to 180 degrees and perform a 30 min hop stand with with 3 oz of your favorite IPA hop, then cool it down to 120 degrees and add 3 more oz of hops for another 30 min. hop stand. finish it off with a big dry hop to make a nice IPA.

    Correct, I heat my water to 163 and it normally settles in around the 150 to 152 range after I add my grains. It all depends on what system you are using.

    Combine the grits and grains together in the mash. When I brewed it I wanted a dry beer so I mashed at 150 degrees. Let us know how it turns out!

    US-05 isn't as clean as Nottingham and it doesn't drop clear as fast. I prefer Nottingham in most of my ales for this reason. It's very clean! us-05 would work as well though just follow what chelisHubby suggests.

    Make a Porter with everything you have plus 12 lbs. Maris otter. Use the same hop schedule as the amber lists above. It will be a kitchen sink brew, but all these ingredients should work well in a Porter.

    lagering and dry hops

    Do 2 and 3! I dryhop in the keg for the duration of the keg at serving temps and I never get any grassyness. Dryhopping does take longer at colder temps.

    I personally would drill a hole in the top and install a tower. Somebody correct me if I'm wrong, but I believe all of your coolant lines are in the freezer compartment shelf so there isn't a threat of hitting the lines. A tower would look better on a mini-fridge in my opinion.

    Cleanest ale beer

    In my opinion I get a super clean lager like flavor from WYeast 1007 fermented cold(58-61). I also get a really clean flavor from Nottingham fermented high 50's or low 60's.
