English Ales - What's your favorite recipe?

I had The Bruery's Mash at a dinner one night and I have been obsessed with that beer Here is the mash bill: 17 lbs Golden Promise 2 lbs Munch 8 oz abbey Malt 4 oz chocolate malt Looking at something between 8 and 10% The flavor that I want is the chocolate raisin/plum taste that I've had...

English Ales - What's your favorite recipe?

Hello! quick question for the English Ale folks. I want to brew an English Barleywine. To get enough yeast my plan was to brew a smaller ESB or Bitter first then pitch a portion(about 3/4) of the cake into the Barleywine. Does anybody have a suggestion for a yeast that would work in both the...

2 weeks to have a Belgian Pale ready for competition

if I understand Belgian yeast at all, won't you lack yeast character with a large pitch? Isn't all the character developed during the growth phase of fermentation?

Grill grate for a bag rest?

I actually use the grill grate and it works great! It makes for a nice surface to squeeze the Iiquid out. Just give the bags a few good spins to get a tight ball and place it on the grate. So far I haven't had any mess using this method

    Semi-Pro Setup Preferences

I brew 5 gallon all-grain batches, with no plans to upgrade to 10 gallon batches. I've done the cooler mash tuns and am currently doing BIAB in my 10 gallon Tall Boy kettle. Thanks! Nick

    Semi-Pro Setup Preferences

Just curious, how much does something like this cost? Does it only run off of 220? To the OP, what type of system are you looking for? Fully automated, BIAB, 3 vessel rig, electric, gas? There are so many options available!

    Oktoberfest recipe ideas (without lagering)

Brew an Oktoberfest(5.5 lbs Vienna, 5.5 lbs Munich 1.1 lbs Caramunich, hop around 23 IBU's) but use an Ale yeast fermented cold. I really like to use Nottingham around 58 degrees. Gives a very clean, lager-like, characteristic. Another good option would be a Dunkewiezen. I love a good...

    10 gal kettle - thoughts?

I love my Tall Boy from Northern Brewer. Just over $120. If you watch, sometimes they will give away a free Dark Star burner with $125 purchase so you can get both the 10 gallon pot and burner for a good price!

    Mexican Vienna Lager critique

Well this is kegged and ready to drink. Since I messed up with the chiller water going into the wort I didn't want to waste my time or my lager yeast so I just pitched a packet of Nottingham and fermented it cold. The result is a darker lager, I would say a dark red/copper color about the same...

    2 Oktoberfest questions

Correct, the decoction makes it darker. What recipe are you looking at? I've used 1.1 lbs of Caramunich and I get a pretty dark(12.8 SRM as measured by iBrewmaster). Here is what I use for my recipe: 5.5 Munich 5.5 Vienna 1.1 Caramunich .5 wheat Some like to use Pilsner, but I like...

    2 Oktoberfest questions

You can use this method to brew a quick lager, it works really well: http://brulosophy.com/methods/lager-method/ The decoction is a debatable process. I've heard that with the modern malts today that decotion is not necessary or benificial. Others swear by it.. I've done it both ways and I...

    Mexican Vienna Lager critique

Hi Jim, thanks for the reply. I actually brewed this today, but had some issue(immersion chiller hose came off and dumped about a gallon of water in the brew lot while chilling before I noticed) dang it! Gravity came in at 1.043. So pretty low. I may end up either dumping it because of the hose...

    Mexican Vienna Lager critique

Thanks for the response! I was going to use CaraMunich but my fear was that I would start getting too close to an Oktoberfest. My plan is to brew one of those after this batch. I'll back both the C-120 down by an oz so to reduce the color and impact of both. Thanks for the suggestion...

    Mexican Vienna Lager critique

I thought so too, but that is what ibrewmaster sets the color too, and from past experience, ibrewmaster is pretty close on the color. I think I'll back the chocolate down to 3 oz. just for the color. Thanks!

Outdoor Brewers - what do you do in the winter?

Yes, I have water in my garage. I also have a heater in there and keep that at 45 degrees in the winter so that my kegerator doesn't freeze. In my old house though I hooked my immersion chiller up to my utility sink using a garden hose to sink adapter.

Outdoor Brewers - what do you do in the winter?

I heat my water and mash in a cooler in the kitchen. I move outside on my deck to boil. I only stay outside to wait for a boil and any kettle additions. Other than that I sit inside watching from my sliding glass door. To cool I either do it at my sink, or in my garage with my wort chiller...

"Standard" Beers Every Brewery Should Have

In my opinion every brewery should have a good Pale Ale. Brewing a good pale ale tells me that the brewery knows how to balance the malt and hops so their light offering(cream ale, blonde...) and IPA should both be good. It is a good in-between offering for those that like hoppy beer but want...
