    Topping up after boil to maximize yield

    You loose hop efficiency by adding water post boil. A partial boil is not ideal, but can still produce good beer as long as you adjust you up your hops to counteract the water being added.

    Why is my IPA so bitter?

    Could the bitterness you are tasting actually be a carbonic bite from bottle conditioning? How was the carbonation? I know when I taste a beer that has too much carbonation I get a harsh taste that I could see being perceived as being too bitter.
