    Poshwieser?

I had some a couple weeks ago. It's really not bad! That's saying something for me because I live in A-B land and have seriously HATED everything I've ever tried from their brewery. It has been a decade since I last had a Bud/BudLite - I'd rather drink water... Anyway, this beer really...

Hopps and trub on the compost pile?

Even with fencing around it I just don't trust my dogs to stay out of the compost heap. I add all my grains and trub, but the hops go in the trash.

Should I remove some of the yeast cake prior to pitching on it?

If I'm feeling lazy I'll just pitch on the cake. Other times, I'll pull out half simply to reduce the chances of an explosion ;) I have also taken a cake and split it into two fermenters if I'm making a 10 gallon batch. There's more than enough... It's a fast and furious fermentation and...

    Storing Grain

I'm a big fan of British and West Coast-style ales. I'm always brewing Pale Ales, Bitters, IPAs, Porters and Stouts which can all be made using the same base malt. The cost savings is significant when you purchase a 50lb sack instead of 5-10lbs at a time, and I brew regularly every 2-3 weeks...

    Using hop socks/bags

I brew with leaf hops and don't use a bag. Once the wort is chilled I'll use my autosiphon to transfer to the fermenter. This works fine for a while, but eventually the level of wort in the kettle drops enough that the hops start to impede the siphon. At that point I take a sanitized SS...

    Albuquerque NM

It's a sickness - but one I'm glad to suffer from :) Welcome! I lived in ABQ about 15 years ago and still think about it often. I miss the mountains and the green chile. Mmmmmmmmmmmmm, green chile stew and a nice hoppy ale :D

    Ferment separately, then mix?

You'll be fine! You could have filled one carboy, then kept the remainder for making starters or priming bottles. Have some fun with it - dry hop one carboy so you can compare/contrast. Different yeasts would have been a good experiment as well, but it's too late this time. SWMBO...

2008 Sierra Nevada Big Foot Ale

I picked up a 6er a couple weeks ago and had my first bottle last weekend. This year's edition has a wonderful complexity and was big enough on both hops and malt to really tantalize the senses, while remaining relatively in balance - admittedly, I'm a hop head. Each sip inspired me to take...

What should I expect from priming with DME?

Yep. I only use DME when I bottle. It's just a little slower...

Dead guy ale lables glow in the dark

I have a growler with the Dead Guy design. Every time I get it filled at a pub I've been told that it will glow in the dark, but it never does.... :( Maybe the growlers get a different paint job than the bombers.

    Anybody else from Missouri?

Not at the moment. I'm pretty well set for grains and though my hop supply is lower than I'd like (that Pliny clone was devastating - but in a good way!), the ones he has aren't of much interest to me. I suppose with the way things are I should just be grateful to get any hops for those...

    Anybody else from Missouri?

Another STL westsider here. Down Eureka way, although I'm on the JeffCo side... Welcome to all the new MO-brewers!

    Dont salt the beer!

My buddy calls this a "Faux-rona". He orders enough of them when he's out drinking that quite a few bartenders now recognize it by name.

    Twin handle vs bench capper

I've always used a wing capper, but my last bottling experience resulted in two broken bottles. I had the opportunity to pick up a bench capper recently and as a result - I'm actually looking forward to bottling tomorrow! It's the Ferrari Super Agata which is easy to height-adjust on the fly.

Having a bottle capper around rules!

I was in a hurry to leave for work one morning and didn't have time to eat breakfast at home. I knew I had cereal at the office but no milk. My Nalgene was in the dishwasher and I didn't want to bring the entire gallon jug. What to do? I looked at my stash of homebrew bottles and quickly...

    Good Dry Yeast for Barleywine?

Wyeast 1056 = Safale US-05 (formerly known as US-56) I tend to stick with dry yeasts for my ales. I've had great success with US-05, S-04 and Nottingham. You'd be fine with any of them.

    Roggenbier (Rye Wheat Beer)

One of my new favorite beers is the He'Brew Bittersweet Lenny's Rye Double IPA. It's BIG (10%abv), highly hopped and full of crazy rye flavor. I believe they have wide distribution and should be easy to track down.

Best Beer in a can? (Raceday)

I haven't tried the Bender... but the Furious is just amazing. It's definitely the best beer I've ever had from a can, although Oskar Blues is up there too. I had a hard time finding Surly Furious in Minneapolis when I passed through last summer. I guess only a handful of stores regularly...

    Roggenbier (Rye Wheat Beer)

DocThirst and I brewed a roggenbier not long ago. It's finally carbonated in the bottle and I've enjoyed a few... the final result is definitely worth all the hassle we endured with the most stuck sparge I've ever witnessed! We used 60% rye malt and 10% wheat. If you're doing this...

    Grain disposal & MLT cleaning?

Spent grains go on the compost pile. Hops go in a forested part of our yard that is fenced off from the dogs. IC water to rinse out the cooler.
