    I think every German just winced. I haven't added fruit to a beer myself but I believe secondary fermentation is the typical time to do so.

    i'd post this in the cider forum, but.....

    I pay $55 for a 55lb sack of great western malt. The sugar obviously has a higher dry extract value but it doesn't have the necessary nutrients to ferment. Lately I've been brewing 4-5% beers and loving the low grain bill.

    How cheap is corn meal? I don't know, in my opinion your can't get much cheaper and easier than malted barley. Potatoes and rice are cheap starch but not very easy to mash...

    With 2oz of Columbus I wouldn't be surprised if it's pretty bitter. I think the best thing to do at this point is wait two more weeks. I think stouts take a little longer to bottle condition than other styles and carbonation has a huge impact on flavor. Buy some craft beers in the meantime and...

    This is really great advice! I was going to say he should hold his breath while drilling. That's pretty good advice, but I think yours wins out by a little.

    Did you some very large bubbles in the foam? I had a few batches go down that road, as it got worse they also got a cow pasture like aroma/ taste.

    I think you missed washing that bottle. I have had the exact thing you're talking about because I didn't wash my bottles only rinsed and sanitized them.

    Have you tried malting corn? I haven't looked into it but I would guess you can get corn pretty cheaply still. You could use corn and barley to make California Common type beer. Another thought, if you could find somebody to sell you barley by the ton you could probably save a lot vs. buying...

    I didn't add any pre-mash because I only saw this post after it was fermenting. I added a pinch with the dryhops and another pinch with the priming sugar. I don't have a super precise scale or tiny measuring devices but I probably added .25 teaspoons each time.

    Hang on everyone! Don't you have washing machines that have a 3/4" supply and an air gap supply you can jam your outlet house into?! This sh** can be easier! F*** the cold winter goblins! This is the perfect weather to make lagers to save until lawn mower season!

    Drinking a dopplebock from a local brewery. It hits a more roasty, stout like note than a German example but I really love it.

    The other guys are spot on but I just want to add, once you get a new gas cylinder you should spray all the connections with soapy water to check for leaks.

    I think that you are correct, skimming barms isn't going to lower attenuation. I think you would be better off starting with barley seed and malting it using old techniques like fire kilning..... Maybe ask @bracconiere to make you some super under-attenuating malt.
