    Battle of the Bottles

I use two types of bottles. The flip tops are very good for short term storage I usually bottle up a gallon in these (4 - 1 liters, or 8 pints). I also use the returnable glass bottles. Some Sam Adam, some New Belgium, not too many Sierra Nevada (thay is offly lils), also the bells bottles are...

I used to think liquid yeast was better

Oh! I really like the Fermentis yeast. They are made by the same company that makes the red star yeast for wine and bread. I think they have a great product.

    Any one brew the Tafelbier?

I don't know what that is. Could you post more info? Maybe a link to a product or a description.

    dry hopping with vanilla beans

In the oak and bourbon, the bourbon would have sanitized them. The ones that I had added to the bright tank I put into a 1/4 cup of water and pasteurized (160F-170F) vary briefly (30 seconds). That beer has not had a problem. I left it in the bright tank for 3 weeks.

Pale or Blonde + Jamaica... Help Me Decide!

Brewer Gold at 60 would be good. I like to through in a little Saaz in my blondes, but I don't know how it will ultimately play out with the jamaica.

I think the dry hop will be very good, but also strange in this style, but like I said it is a house style, so to each.

    Oh I used Mosher's Saison from radical brewing and then adjusted it to what I liked. 8# -- Belgian Pilsener 3# -- American Munich (light) .75 - Torified wheat 1.5 - Demerera Sugar 1 oz -- 60 min -- Northern Brewer 2 oz -- 30 min -- Saaz 2 oz -- 5 min --- Argintine Cascade 18g -- Coriander...

I don't get it.... I don't get it at all...

I don't think it maters too much for home brewing, but you may find that some ingredients are cheaper at certain times. From a breweries perspective I think that they are tied to some beers by their customers and their owners. A brewery often times offers three types of products. A core line up...

Will sodium benzoate kill my yeast?

Oooooh I might have to put that on a house handle.

You could get some color from a little Belgium Aromatic. It would also add some complexity. I forgot to mention. This really is a traditional homebrew style in Belgium. Think of all the strange things brewers do to there beers where you are from and then try to translate that into Belgium...

Whoa! Back off the grains of paradise. they are typically used at 1-5 grams. I go with 3 grams (0.1 oz) The cor iander could be bumped it is a subtle citrus flavor in the final product. .5 oz is a good starting point but .75 oz is still a subtle addition. A saison is a house beer, and as such it...
