Autumn Seasonal Beer Thunderstruck Pumpkin Ale (AG and Extract versions)

I'm loving the look of this recipe, but I have been thinking: I've had several pumpkin ales and in each case my major complaint is that they don't have the body I envision. I always figured a pumpkin ale would be really heavy and chewy, like a porter or stout, or... you know... a pie :D...

    Second Brew: Should I Wait?

Empty out your fridge and ferment lagers :D Honestly I have no idea if there are ale yeasts that can ferment that high, but I'm going to guess no. Anyhow, you want steady temps for fermenting, or it throws the yeast all out of whack. I think >_>

    In over my hophead

Oh, well I don't know much about rodeos... Not that I know much about sexually agressive rodeo clowns either! But yeah, I'll toss both the EKG and the NB in to dry hop. This beer is actually for my father. I asked him if he wanted me to make him a batch. He said 'sure', and I asked what...

    In over my hophead

LMAO :D Brilliant! I got 85 IBU's in Beersmith though, probably you have different AA values? I know I had to adjust mine. Regardless, I'll take that advice. Now I have the mental image of a rapist rodeo clown to burn from my memory

    So who's brewing this weekend?

I racked my first brew - Biermuncher's Black Pearl Porter - to a secondary. Then I brewed an IPA I might have bungled the hop schedule on - too much bittering/not enough finishing... I think.

    In over my hophead

Well I have 1oz. of NB and 1oz. of EKG. I was planning on using the EKG to dry hop - would adding the NB to that bump the aroma up? I know it's described as dual purpose but mainly bittering, though I'd like to make sure there's a decent aroma to match the 85 IBU's. Oh, OG was 1.063. How do...

    In over my hophead

Ok thanks guys. I added in the grains and AA units for clarification. Well, if it ends up like a British IPA, then that's great, because that was the goal :D My concern was really that the 3oz. of EKG would impart enough flavour to counterbalance the bittering hops but my first taste...

    In over my hophead

2nd batch - AG IPA. I think I may have butchered this. The LHBS hooked me up with hops that had AA levels higher than what I was expecting, so I adjusted the recipe the same day to accommodate. I think I may have completely bungled the hop schedule though. 10# Maris Otter 1# Carafoam 1#...

Taking a swing at an IPA

Regarding the sweetness: Yes, I'm certainly going for it, but I don't want to go overkill. Will this be 'somewhat sweet' or possibly overboard? This brew is actually for my father, and he always leans towards highly hopped brews with a mild sweetness to them (but not to any great excess). If...

Taking a swing at an IPA

Thanks for the suggestions! I've edited the hop schedule as such: 1oz. Brewer's Gold 8.1 AA (60 min) 1oz. Challenger 7.5 AA (60 min) 1oz. East Kent Goldings 5.0 AA (20 min) 1oz. Yakima Kent Goldings 5.2 AA (10 min) 1oz. Yakima Kent Goldings 5.2 AA (5 min) 1oz. Yakima Kent Goldings 5.2...

    Never Started My Yeast

I cheat and just rehydrate two packs of dry yeast >_>

Taking a swing at an IPA

Thoughts? Comments? I just meandered through my LHBS online supply and came up with this: 10lbs. Maris Otter 1lb. Honey Malt 1lb. Caramel/Crystal 40L 1oz. Brewer's Gold 8.1 AA (60 min) 1oz. Challenger 7.5 AA (60 min) 1oz. East Kent Goldings 5.0 AA (30 min) 1oz. Yakima Kent Goldings 5.2 AA...

Airlock Dried Out - Wine got cloudy?

Thanks so much. Going to get this done tomorrow. Good thing the reds are already bottled :mug:

Airlock Dried Out - Wine got cloudy?

Thanks! We have metabisulphite in powder form. What measurement would be equal one of those tablets? Wikipedia says 10 tablets = 1 teaspoon but I always double-check wiki info before I put it to use! How will we know if it works? Will the cloudiness clear up?

Airlock Dried Out - Wine got cloudy?

No pics, but I hope that maybe someone has had this happen: It seems the airlock dried out on one of our carboys of white wine sometime in the last week (it should have been bottled a while ago but schedules haven't allowed it). The wine has become cloudy and there seems to be a very thin film...

English Porter Black Pearl Porter (AG)

Oh. Lawd. I brewed this yesterday as my first ever homebrew. A couple differences: Canadian 2-row, 40L caramel instead of 30L, Willamette instead of Fuggles, 2 packs of S-04 and no lactose (I can't have it) The wort tasted.... AMAZING. I forgot to take a gravity reading before I...

    Mash out question

I asked this question in the thread for the recipe itself a few days ago but got no response, so I figure I'll ask here: I'm going to be making this: https://www.homebrewtalk.com/f126/black-pearl-porter-ag-24243/ And the mash schedule is copy and pasted as such (for a 5 gallon batch)...

My checklist - am I missing anything? First batch AG

    I have ~10 6 gallon buckets; winemaking FTW :D

My checklist - am I missing anything? First batch AG

Good point. I'm pretty sure I have another big pot or two kicking around.
