    Vacuum sealing hops?

    I find that 4 oz is a good size. Make the bag a little bigger than you need it. Cut it open carefully, take out what you need, seal it back up before they can thaw. Works great.

    Quick-disconnect airlock for corny keg? (is there a better way?)

    yup. Remove poppet from gas-in post. Re-install post. Use 3" of 3/8" silicone hose and apply over top of gas in post. Insert air lock into hose When done, remove airlock hose and post, and insert poppet. Re-install post. Purge with CO2. Very little should be needed......
