    IPA too sweet after bottling

    I don't think 4 oz of corn sugar in 5+ gallons (assuming) of beer would make it sweet. Was this all grain? Extract? Partial mash? Maybe you mashed at too high a temp.

    I know this is getting a little complicated but still simple enough. Why not use two separate elements one 2000W and one 5500W both with the capability of switching between 240V and 120V. Surely with the eight possible wattage configurations you could get to a boil quickly and then maintain it...

    This is the approach many distillers use with their electric kettles, but they have taken it a step further and usually run a 4500W to 5500W element at full bore to get up to a boil and then switch the element from 240V to 120V, effectively quartering the wattage of the element to maintain the boil.

    My version of this is in primary right now. I guess it can't be considered a clone bescause I used Maris Otter and Nottingham and it was the first runnings of a parti-gyle. I did hit the gravity dead on and used the same hop schedule.

    Good heater for small fermentation chamber?

    Mine is actually a full size fridge but needs a little heat in the winter, even in Arizona. I don't see why a hair dryer wouldn't work for you in a ferm chamber made of foam. I set it on low heat and have it plugged into a RANCO temp controller.

    Sounds like you're doing a no sparge kind of thing. I would try emptying your initial strike water and then doing two batch sparges. Oh, and stir, stir, stir.

    Your Sorachi dry hop is set at 0.000 s while your Amarillo and Citra dry hps are set at 1.000 hr. The hop schedule might need to be adjusted if your going for a specific amount of IBUs.

    I don't remember if I drilled them out or filed them. Probably both. Since I don't remember it probably wasn't a big deal.
