    Lager quickly reached 1.02

Cool. Thanks a lot for the quick replies. I will make sure it is completely finished before racking to secondary.

    Lager quickly reached 1.02

I'm fermenting my first lager. After only 4 days in the primary, I noticed that the airlock activity had become very slow. My research on when to perform a diacetyl rest led me to believe it would take somewhere around 10-14 days to finish 75% of fermentation. To be safe, I took a gravity...

    Show us your Kegerator

Just in time for the Halloween, my finished keezer build: This is the 5 cubic ft Holiday model. The internal collar layer is made of 1x8 boards. It is really tight, but I can actually fit 2 kegs and a 5lb C02 tank in the main part of the freezer and a fermenter on the compressor...

    Consecration kit from MoreBeer

The kit came with 2lbs of currants. The renewed fermentation from the currants and the Wyeast Roeselare yeast I added is pretty vigorous for a beer that had already fermented for 2 weeks in the primary. I am using a 5gallon carboy for a 5gallon batch, and I cautiously left behind a little...

    Consecration kit from MoreBeer

I brewed this kit a few weeks ago, and I just racked to secondary on the currants and bugs. It looks pretty cool, so I thought I would share some pics. Here is the first night. About 5 hours after racking. A lot of currants floated to the top: This is 2 days later. Lots of foam...

Fermentation Fumes - Eyes Water, Throat Burns

I also recently starting fermenting in a chest freezer for temperature control. I always like to smell the yeast at work during primary fermentation, and when the fermenter is sitting in an open room, I had to put my nose close to the airlock and inhale deeply. So you can imagine what happened...

    Fermented too high

Yeah, I'm fully prepared for the beer to still be undrinkable after my experiments. I think it will be interesting to see what happens, though.

    Fermented too high

Dry hopping. That sounds like an excellent idea. If you can't get rid of the flavor, just sweep it under the rug.

    Fermented too high

I made a Belgian dark ale that accidentally fermented at high temperatures during primary fermentation. The whole downstairs area in my house smelled like bananas. I thought that was kind of neat... until I tasted the bottled product. Awful off flavor. It was like super esters transformed...

    Fig Lambic

Thanks all for the suggestions. I think I will try to roast the figs. So Revvy, you used 2lbs of dried figs. 5 gallon batch? I wonder how much weight figs lose when dried. 3lbs of figs for a 2.5 gallon batch might be comparable... I will definitely update the thread with details on the...

    Fig Lambic

I did see the post about caramelizing the figs. That seems to make sense, but I don't have the experience with adding fruit to beer to make a great judgement call on it. I will definitely let the beer age before adding the figs. The figs are ripe now and this has been a good season for them...

    Fig Lambic

This is my first post, so just wanted to start out by saying that you guys are great. I've been reading this forum for months, and I never felt the need to post anything until now because all my questions were answered. Anyway, I am planning to brew a lambic style by pitching Wyeast Lambic...
