    The "Dear" , "Sincerely" thread

(Just to keep it light in here...) Dear St. David's ER staff (esp PA Felipe), Thanks for doing such a good job stitching up my little girl after she ran through a sliding glass door last weekend. Sincerely, her dad

Drank my first IPA ever this evening.

I find it odd that what inspired you to write your very first post on HBT was your desire to call a significant portion of the community poseurs. That's an interesting choice.

Any non-wheat ale suggestions for wlp300?

Thanks for the suggestions, all. I'm making my first trip to the new homebrew shop in South Austin this weekend and I'll post back with what I end up with. Tempted to do the roggenbier recipe in Zymurgy, but I am completely unfamiliar with dampfbier, so I might try that. There's an article and...

Where should I go for beer?

Weather not being a consideration (which, if you're actually travelling around Christmastime, the weather will probably be ****), Portland, OR. There are tons of great breweries and brewpubs in the Portland/Mt. Hood area and also tons of other stuff to do. You may come back w/ a fixed gear bike...

Any non-wheat ale suggestions for wlp300?

As the title says, I'm appealing to the HBT brain trust for recipe ideas for non-wheat beers using White Labs Hefeweizen Ale (wlp300). I'm about to bottle a batch of EdWort's Bee Cave Brewery Bavarian Hefeweizen, in which I substituted wlp300 instead of the Wyeast strain in the original...

I stack cinderblocks 2 high on 3 sides around my burner to (a) block the wind and (b) provide added stability.

How many empty carboys do you have?

    2 - 5 gal empty 1 - 6 gal empty ...and only 1 full 6 gal (EdWort's bavarian hefeweizen). I need to get cracking.

    Importance of a "rolling boil"?

I'm gonna be that guy, and amend your post: But yeah, when I saw the post initially, I was thinking this is the route I'd go if I was living in an apartment.

    Online Buying Rather Than Local

A little off topic, but my LHBS is Austin Homebrew and I still order online...from Austin Homebrew. It feels a little bourgeois and lazy, but the way I look at it, 2 hours of my Saturday is worth more to me than the $7.99 for shipping. EDITED TO ADD: AHBS is all the way across town from me.

    First BIAB experiment; Need advice

Ask the LHBS to double-crush. Most places will do this if they're not slammed. You could also try a 90 min mash. Mash times and relation to efficiency is sometimes hotly debated in these parts, but anecdotally I can say it seems to help me. ALSO, it sounds like you didn't mash out. Try mashing...

    Is kegging legal in Utah?

I hear you. Earlier this summer I was visting friends in Ottawa for a couple weeks and we lamented the Beer Store situation often and at length. It was very surprising to find that, legislation aside, the Beer Store itself is a privately owned Anheuser-Busch-InBev/Molson-Coors/Sapporo/Sleeman...

    Is kegging legal in Utah?

To be fair, it's not like UT is the only state with absurd and outdated liquor laws. I'm visiting family in OK right now and %3.2 beer is the only kind of beer you can buy in the grocery store (have to go to the liquor store for something stronger). In RI, you can't even buy beer in the grocery...
