I don't know. I wonder if the yeast isn't still eating some diacetyl while its compacting in the jar.

Any other Catalyst users having trouble with Diacetyl? I think my yeast is floccing out and losing contact with the wort as it settles into the mason jar. Any ideas? I use yeast that's specific to high- alcohol tolerance thanks in advance

Actually, I under-tightened and generally was overly gentle with it. Total user error. No problems at all with my first batch on it

My initial test with water had some leak, though not as much. Check the gasket in the valve and the lip of the bottling attachment (maybe chipped)?

I would think the gas volume in the catalyst would be effected very similarly by dropping from fermentation temps down into the 30s. 37 vs 34 wouldn't be a huge volume change IMO. Thanks for the replies. I was thinking of pumping some CO2 into the top every 10 degrees or so, as it cools

Awesome! Black tusk may be my favorite beer ever. Haven't had the original in nearly a decade. Drinking my first Black IPA now. Has some of the same dark malts. Cheers for the knowledge!

Barleyhaven is local to me. Great store and he's a helpful guy. Has had some Colorado-grown hops from time to time as well

Thanks for that update. Good to know. I am just starting brewing again after 15years. A lot of new equipment out there. This is on my short list of equipment to buy, as I am borrowing carboys now. Just the price is catching in my throat. 2 suggestions for future... If you can do this in...

How is it going with this mod? Any issues with actual fermentation runs?

Solid Video. Thanks for doing it! It gave me a pause I hadn't thought of before. What do you think after having handled it. Food containers like Snapware use the same style folding closure with a gasket and they always wear out and break. I am convinced they do it to make you buy more of...
