    Tasted newly kegged beer.....

It is a Coopers Mexican Beer kit. I was trying to ease back into brewing. I followed the directions, but I let it sit for over 3 weeks.

Can StarSan Go Bad Over Time?

I have 4 year old StarSan? I've noticed my first two batches taste cidery. I was thinking it could be acetic acid bacteria. I am a freak about sanitation, but maybe it's too old? Also, the bottle has a crack in the lid and has been exposed to air. I'm not sure how long the lid has been...

    Tasted newly kegged beer.....

How long should I let it "cold condition"?

    Tasted newly kegged beer.....

I sampled a newly kegged mexican beer today. It sat in the ferm for over three weeks FG was perfect and clarity is great. I am in the process of carbing (got it cold, 25psi, rolled around). I know it shouldn't be carbed yet, but had to taste...it tasted sweet, a tad like apples???? Does it need...

    Gelatin For Clarity?

I read posts about adding gelatin sometime before bottling for clarity? Thoughts/ideas? I've let a Mexican Beer sit in Primary for almost a month now and I am about to keg. I don't mind cloudy beer, but Mexican beer is typically really clear.

    What to brew next?

    How about a peach wheat?

To secondary or not to secondary...that is the question

How long do you guys typically let your beer sit in the keg before drinking after racking from primary? Do you place in cooler while waiting?

To secondary or not to secondary...that is the question

You can brew a batch from start to finish in a plastic ferm when in a pinch....can't you? What will be the outcome of your brew?

To secondary or not to secondary...that is the question

I've read a lot of posts and some use a secondary and many do not. What are advantages of using a secondary and is it truly worth taking this extra step?

    Distilled Water??

I brew extracts/crushed grain bag kits from my local brew shop typically.

    Distilled Water??

I was always told to use distilled water when I brew beer. Give me your thoughts on it. Does it give me a true beer flavor or is it giving me an off flavor? I've been practicing this method for a long time, so I don't know the difference.

    Mexican Cervesa

I will let it sit another week. I have a peach wheat in another carboy and I have an American amber that has been bottled for two weeks..... I'm getting thristy!

yikes all of my aged beers have developed a licorice taste

Is there something wrong with using distilled?

    Mexican Cervesa

I brewed a cervesa two weeks ago. It frem'd rather quickly due to heat, but I've left it alone for a couple of weeks. I did a gravity reading today and it is perfect at 1.008. Should I pull it and bottle it up this weekend? Color looks great as well. :tank:

    Peach Wheat OG Reading

OK...I added the water last night. Beer is bubbling at 72 degrees! I can't wait to drink it. I hope to drink mid-summer!

Cool. I will top off now. It won't hurt my beer adding water this late in the game?

    Peach Wheat OG Reading

Oh, crap! Is it too late to add some more water? I put it in the ferm about 3 hours ago. I'm not sure how much to add since I'm using a 6.5 glass carboy. What do I do??????

    Peach Wheat OG Reading

I don't think I over/under filled with water. I used bottle water (one gallon jugs) and used five gallons...
