    Duke, The Cambden only prevent wild yeast. You can omit if you want but it will have no affect on the end carbonation. If less sweet start with 2 concentrates and take a sip, adjust to your liking. Also, let it carb for about 4 days then pasteurize or yes they very well could become bombs.

    Also, for some reason I had something different on my mind at the moment I guess when I mentioned using Campden tablets.... you can also use Potassium Sorbate in place of the campden tablets to stop the fermentation in order to back sweeten.

    Corona recipe clone

    Get the Muntons or Coopers Mexican Cerveza kit, 3 lbs. Extra Light DME and upgrade the yeast to WhiteLabs Mexican Lager yeast and you will make a much better version of Corona.

    Yes I am keeping this thread going. I happen to like Corona! Gotta say the Munton's Mexican Cerveza kit with an upgrade to the yeast to WhiteLabs Mexican Lager yeast and a little indirect sunlight in the secondary makes for a near perfect clone actually I like it better than Corona or Sōl.

    Let it be, however no need to pitch extra yeast just because of the "best by date" if your yeast is ever past that date, use it and make a starter to prove it and pitch.

    The only way to tell is to take a hydro reading, but anywho just for ****s and giggles you can give the carboy a swirl (just a gentle swirl, don't shake the hell out of it) and see if that rouses the yeast back to life, it may have just gotten stuck.
