    We all like to have the clearest beer. But as you close your eye and drink that first taste of your creation it no longer matters. There are other issues to master before clarity IMHO.

    I brewed 10 gallon batches very happily in a temperature controlled refrigerator. I used two 5 gallon carboys that sat on a plywood platform about 18"s above the frig floor. Two sets of blow off tubes ran down through the platform into two one gallon plastic milk jugs. Sweet tasting beer.

    Oxygenation in a 15 gallon fermentor

    When brewing smaller batches I sometimes used an oxygen tank with a diffusion stone to add oxygen to my wort prior to pitching yeast. I now brew 15 gallon batches using a conical for fermenting. Anybody out there oxygenate wort in conicals? Is it worth the effort?

    When I first got my tank, people here were encouraging us to place the plastic fermenter in the sun. It did rid all plastic smell from the unit. I would recommend you do this as well after the clorine process.
