I put a 1.087 baltic porter on this ^ yeast cake. Mashed at 155. Fermented at 78. Reached FG in 5 days - 1.022. 8.5%, 73%AA.

I co-pitched a 500ml starter of Aurora + Sour Weapon L (no starter) into a no hops/no boil 1.048 wort at 90F. 50/50 pils/red wheat, step mash. 4.8 - 1.048 4.11 - 1.010 / PH 3.5 5%, @80%AA It's about to get a truckload of tropical hops and fruit.

34/70? TBD. I just drank the beer sample from the hydrometer tube, not the best for tasting notes. Once I get it bottle conditioned, chilled and poured into a proper glass i'll be able to give some more thoughts about the yeast profile. Initially though, I'm impressed with the performance.

Update on both the NEIPA and the English-style pale with NEEPAH: The English-style pale rounded out nicely and the mid palate bitterness is gone. I think I still prefer LAIII for this style to NEEPAH as I get a bit more English style esters out of LAIII. Hard to tell without side by side...

I pitched at 68 yesterday, it's holding at 70 this morning after 12 hours. Needed a blowoff w/ a second gen pitch of NEEPAH into 1.062, it was crawling out of the fermenter this morning. I'm typically in the keg in 12-14 days, then don't really start drinking it for two more weeks.
