    The best I have found is White Labs 007, DRY ENGLISH ALE yeast. This stuff really leaves your beer very clean and dry. I would compare this yeast to Pac-man yeast. I haven't done a side by side but they seem to be comparable.

    I thought that might be the case. However, when I harvested the yeast I thought the active fermentation was finished. Then I put the yeast immediatly into the fridge at about 40 degrees. I would not have thought that fermentation would continue but it seems that must be what happened....

    Don't be afraid to order yeast online. Just check first to see how bad the shipping charge is. I like to order from BrewGadgets (they don't beat you up on shipping). They stock a pretty good selection of both liquid or dry yeast. Cheers

    How long does it REALLY take for your fermentation to start?

    I use White Labs yeast, and according to "Mr. Malty", I under pitch. I pitch one vial when I should be pitching two. Too much trouble to make a starter. Even so, I usually get good airlock activity in about 24 hours or less.

    Any thoughts on how wort temperture when pitching affects lag time? It seems to me that my beer starts much faster if I keep the temp above 70 until I see signs of fermentation. I then try to drop it down to around 68. But If I start below 68 it really slows things down...
