    Fermcap ... I use it, but I question it at times. Polyclar as well ... I mean its plastic. I know it is supposed to settle out, but who knows if it really does 100% settle out.

    I wrote an email to white labs, and this is the response: Normally, the WLP565 (or WLP566 when available) would be the yeast strain of choice when making a farmhouse ale, but the WLP400 should work out OK as well, especially if you ferment it warm to encourage the ester/phenolic formation...

    What about ferm temps? Farmhouse ales are generally fermented hot (in the 90's). Should I go ahead and ferment that hot with this yeast, or would that be a bad idea?

    Pasteurization in USA

    I have family that works at anheuser, there is definitely a difference between the beer he brings home fresh and the stuff in stores .... much better fresh. I don't think flavor has anything to do with the process.

    I have done both, used carb drops and bottling right from the faucet using the B< beergun method. Spray some starsan in the faucet before bottling, I've never had an issue, have had them bottled for a month or two before driinking. I prefer bottling from the faucet ... no trub in the bottle.

    Mashed at 170F :(

    I mashed at 168, not realizing my thermometer was off. Took awhile, but FG got down to 1.018. Ride it out ... you may like the results.

    Yeah, I loved SA Cream Stout. So I made a clone. Was drinking mine and thought something was off. I bought a 6 pack, and they are identical. I thought I screwed up the batch, but it's just the beer .....
