    Iron/Metallic Flavor?!

Well I had a couple glasses of the porter last night. The first I poured and immediately sampled and analyzed. As expected it had the same off odor and taste as described. Quite metallic on the nose, and a zing of iron in the finish on the tongue. The second glass I poured, but left it on the...

    Iron/Metallic Flavor?!

I hadn't eliminated this possibility but I fermented a batch of ESB prior to the porter and it was phenomenal. No off flavors whatsoever.

    Iron/Metallic Flavor?!

Ugh...I hate brewing beer. Why do I torture myself so? Lol so many things. Yeah I don't think I'll be using Fuggles frequently once I've finished up this pound. I think it is likely an oxidation issue that has been exacerbated by the instability of darker malts as well as the stale oats/fat...

    Iron/Metallic Flavor?!

We'll the beer does have sort of a woody, cardboardy, dirt flavor in the background too. I kind of attributed this to the fair dose of Fuggle hops but idk...it's starting to sound more like oxidation? What do fuggles taste like to y'all? Could the oxidized/cardboard taste be confused with the...

    Iron/Metallic Flavor?!

I think IF they are the issue it was that I had them stored in a paper bag for a couple weeks, but do you really think half a pound of stale oats would ruin the batch and create a metallic flavor? I'm not saying it's out of the question, hell I don't even know, it just seems a bit of a stretch...

    Iron/Metallic Flavor?!

Yes I do mill my own grains. The only ingredients that weren't fresh were the small dose of toasted oats I mentioned.

    Iron/Metallic Flavor?!

Yes my Flex+ is pressurizable. I seal it up and hook it up to gas on low pressure.

    Iron/Metallic Flavor?!

Yeah idk. It seems strange that a bad malt would contribute such a heavy off flavor. It is unmistakably an iron or "ferrous" flavor. And it's gotten noticably worse in just a few weeks. It was not apparent at all when I sampled the beer from primary or even after a day in the keg. Unless the...

    Iron/Metallic Flavor?!

Hey guys. I recently brewed an English Porter. Maris Otter Briess Chocolate Malt Crisp Brown Malt Crystal Malt The beer was fermented in my Spike Flex stainless fermentor. It was fermented with WLP002 and then cold crashed and kegged. The beer initially tasted pretty good after a burst...

    Thoughts on boil-off rate?

Why such overkill on the kettle?

    Thoughts on boil-off rate?

Cool read! Thanks. So I should be targeting <.5gph boil off to take advantage of the benefits mentioned here? Is boiling for 60min. Still advisable for good hop utilization, granted I keep the boil to a well controlled simmer?

    Thoughts on boil-off rate?

I guess I was mostly wondering what y'all thought about the effects of boil-off rate and what it does to the finished beer. It seems that some people believe even what is considered an average rate (1-1.5gph) can have detrimental effects on finished beer such as poor head retention, mouthfeel...

    CHARACTERFUL British Yeasts

WELL, after enjoying a good Doppelbock, I realized the character I have been longing for is not diacetyl...it's not esters...ITS MALT! All this time I couldn't zero in on straight up malty goodness. I drank a Troegenator and though the character was much more pronounced it had a strong...

Trying to simulate British real ale...

When using a large percentage of invert is it okay to add to the boil? Will this cause problems with the fermentation. I've gathered that much more than 10% can cause the yeast to get lazy and stall out.

Trying to simulate British real ale...

@Northern_Brewer That's kind of what I'm after! I mild without all the adjuncts or special malts I see everywhere. I sort of thought that historically they would be very some beers, but never had a good understanding. I am only recently learning that the BJCP guides are quite flawed and are...

Trying to simulate British real ale...

@Northern_Brewer would you condition a keg with priming sugar then, to better represent the true British beers? Or would you just go ahead and bottle at that point? Also-could you point me to a good, traditional dark midd recipe? I see in the Favorite English Recipe thread you mention a few...

Trying to simulate British real ale...

Very interesting! I always doubted that ALL of the flavor and aroma was lost. I'm obviously not expecting it to be an American hop bomb or anything using that method. Well I think I've got a good handle on what I wanna do on my next bitter. I've got a ton of fuggles on hand already. Do you...
