sa05 does that to me as well. I think its just the yeast let er go man shell be good!

I did a stout, same thing at first was horrible tasting, I went ahead and brewed more and actually forgot about the stout for awhile I opened up one this xmas must of been 9 months in the bottle and it was amazing.

+1 to b-boy, The wine theifs are super affordable and great to throw a hydrometer in to do a reading as well!

Hey Ruxin, When I did the Pale Ale Kit, I dry Hopped it with 3 oz of Cascades in the Secondary, and used US-05. Had a very active fermentation and turned out very nice by far the best beer I have done (only done 4 and it was the 3rd).

Please report back with your findings unfourtunately I have no input on this discussion but love the idea/concept very intriguing.

I dry hopped in my secondary (day 21/22) for a week. Than bottled right away. Turned out delicious. I have also heard about dry hopping to long depositing very grassy flavours, your call have some fun with it!

+2 on Rehyrdate I didnt do it on my first two batches I did but I decided to on my third and the fermentation was much quicker and the beers taste much cleaner personal opinion.

Sounds like a perfectly normal fermentation. Everything is fine usually can expect a very hot active fermentation at the beginning after that it will settle down quite a bit almost as if not doing anything. Dont worry though it is.

Your last sentence said it best. Its hard to be "perfect" but everyone learns different ways and who knows you may have a winner on hand? :tank:

My stout was the same situation the very first one had a off taste. But I am now going about 3.5 weeks in the bottles and they are tasting better and better!!! IPA is up next!
