    Hello, no point in adding citric acid now in middle of fermentation. Apples contain malic acid, so it should be fine from pH point of view. As for adding more sugar, please avoid - risk of infection, oxidation etc. Also, definitely raisins & apples will add to the ABV.

    I have had some success with burnt honey. It becomes less fermentable and leaves sweetness but it may have flavour too. Give it a try, heat up a tablespoon of honey slowly and when it caramelises, let it cool and try it.

    I made a fermentor and air-lock from some bottles and straws, is it safe?

    This is as good as it gets. At times, I don't use air lock at all & ferment with lids lightly placed on jars or covered with cling wrap. As long as everything was sanitised and healthy yeast was introduced, things work out well. Good luck.
