    Too much head?

    Sorry, I don't have a better way to ask. Is there such thing as too much head? My last 2 brews developed great head with lacing even when the glass was empty. When poured into a cold glass the head seems as thick as egg whites whipped to light peaks.

    What are you drinking now?

    I just got home from work and I opened an amber ale that I bottled 4 weeks ago. 3 weeks ago I thought I screwed up the recipe but tonight is is pretty good and I am quite happy with it. Patience is everything when it comes to homebrew.

    I don't have one but heard only good things about them. They are a bit pricey when you add all of the racking adapters, dry tap airlocks, etc. I haven't dropped a glass carboy but I bet that is an absolute nightmare. Better-Bottle bottles, Better-Bottle carboys, and Better-Bottle fermenters...

    Why you should never get creative...

    In cooking instead of using the whole peel we would just use the zest. The white rhind has alot of bitterness and sour to it but the zest will contain essential oils and none of the bitterness.
