    Using mother nature for cold crashing

    Anyone put a carboy into a snowbank? I was thinking that if you really burried one in snow you should be able to not only cold crash, but even lager like that. if you really pack it around the carboy it *shouldn't* get colder than 32 degrees f, right? sort of the same theory that orange...

    holy sulfur bomb batman! (wheat yeast ferment)

    UPDATE: took gravity readings from both carboys (one with Westmalle yeast, one with the sulphury weizen yeast). the belgian yeast that was super active is at 1.018 and the weizen yeast that looked like it wasn't doing anything is at 1.013! weird! still tastes/smells sulphury and sort of sour.

    I'm fermenting a stout with Wyeast 3068 Weihenstephan Weizen 2 days in and the smells coming off of the airlock are SULFUR...like rotten eggs. it also has the thinnest krausen I have ever had in a fermenting beer (about 1 inch). This is a split 10 gallon batch and the other half is fermenting...

    UPDATE: so after another month with little or no improvement I added lalvin champagne yeast to each bottle. I rehydrated in warm water and added ~4-5 drops to each 12 oz bottle and about 10 drops to each 750ml bottle. I'll let you know in a month or two how this turns out. I noticed...

    Bottle dregs -what did I brew?!

    UPDATE: I took a look / taste for the first time tonight. ~2 1/2 months after brewing. slight patchy crust floating on top (startings of a pellicle)...smells great nicely sour. tastes nice and tart. kind of like a citrusy-pineapple, sweet-tart kind of taste, with a small amount of depth...

    I believe that La Folie does NOT contain cherries. you get the cherry aroma from the Brett.

    20 lb of sugar and a jar of yeast nutrient

    Has anyone tried using Turbinado sugar for doing this rather than just white table sugar??? Thoughts? I bought a 6-7 LB bag of "Sugar in the Raw" from Costco yesterday and was thinking it might make for a fun/interesting experiment.

    AWESOME!!!! just ordered...Thanks for the tip. can't wait...I've been really wanting to brew a westy 12 clone, and my 5 gallon cooler/MLT just isn't up to it (unless I only want to brew 3 gallons). Time to do some shopping for other fixins!
