    I'm only looking to make small batches, just 1 to 3 gallons at a time. I hadn't thought about renting equipment or anything like that, although I'm not sure how cost effective that would be unless I was going to make larger quantities at a time.

    My twin ciders. Both of these are identical. My initial plan was to ferment dry and then later combine them into a larger carboy so I can backsweeten with fresh cider. Now I'm debating about keeping them separate: maybe dry hopping one and backsweetening the other.

    Thanks for the responses. If I'm understanding this correctly, I'm going to shoot for 2.4 vols, so that it should be nicely carbed while remaining under the bottle stress threshold. All of my bottles are brand new, so that should work in my benefit.

    I can understand not using water, but what would be the benefit of omitting sugar? Besides boosting the alcohol content, wouldn't sugar sweeten the taste?

    Worth it. It was my first attempt at a mead and I read that you should wait at least 6 months after fermentation. What I drank at 9 months was definitely better than what I drank before the 6 month mark. I bet that would taste really good, but I'm afraid I may be too impatient for that.
