    Phoenix Brewout 4/12/08

Move to West Palm Florida, same goes for the rest of you. ;) Sorry, suffering from the "I moved away from all my fellow homebrewers blues" Two homebrew clubs, Mike T, a burgeoning brewlationship with Evan!, all gone - why did I move here?!?!?

    Mead Pils? Werd.

I agree. He's got huge lifesize cut-outs of himself all over his house! I know, I've brewed with him. ;) Seriously though, Evan was much more laid back and casual in-person than I was expecting from his posts/demeanor online. One of the many things I will miss about living up north was the...

    Ambient/Spontaneous Fermentation

I agree with TexLaw, most(if not all) of the reports I've heard about fermentation of fruit juices using only(mostly I guess) the yeast on the skins of the fruit has resulted in a good, clean, non-sour taste. However mine, which no doubt got yeast from the air and from yeast blown off the fruit...

Saison du Vieux Bâtard Sale "Finished" at 1.017?

Time to finally get your hands dirty and add some Brett my friend. You've put it off long enough, take off the training bra......;) Seriously though, if you add another yeast strain get it going first, don't add it straight to 'wake-up' in the beer. Wake it up first(starter) and then dump it in...

Another reason to like Boston Beer

Maybe that's the real reason they did it.....hmmmmmm.....interesting........ I admit it, I give no credit to Sam Adams for anything. :D They want their image to be a certain way, and will do what it takes to make sure they're still everybody's favorite 'micro' brewery.

Wyeast 3191 VSS Berliner Weisse Blend

It is possible to be below 1.000, but fairly rare. Check some room temp water and make sure the hydrometer is correct. Also, because you're at such a low FG(not possible to get too much lower I think) you don't need to worry about bottle bombs. Yeast or Brett or whatever would fully ferment...

Ever notice ones you go all grain, it consumes you?

It was very ealry in my HBT days, didn't know you at all, and a few threads in a row you seemed to be posting directly after me disagreeing with what I said. I PM'd just to say WTF, you got a problem with me or something(in a nicer way)? I was just overeacting to what was just a coincidence...

    Hole in One!

Never hit one myself, but was with my dad when he did. The thing was it was an ugggly shot. Topped the ball, and rolled up onto the green and into the cup. It sucks because I'm a much better golfer, but have never had the good fortune to accomplish what he did with a miss-hit, ugly shot.

Ever notice ones you go all grain, it consumes you?

I think that is still 'to-be-determined' by some. Wanna fight about it? P.S. Remember when I thought you had a problem with me bird? So funny, I must have put my SWMBO's panties on that day by mistake. ;)

    1.070 FINAL gravity!?! Couldn't be.

I want mine to age long/well too, but I find mine just strikes me as odd without any carbonation. It has some winelike characteristics, but its not wine, and to me it would be better with a little carbonation. BTW, https://www.homebrewtalk.com/showthread.php?t=41193, before that I posted my...

    1.070 FINAL gravity!?! Couldn't be.

Maybe this should be your new avatar Evan!: At least I was trying to be positive. ;) Seriously though, I agree 100%, expect for the not bottle conditioning. My 20%'ers at least make a pfssst when you crack them, no carb though. Had I lowered the ABV 1% I'm confident those babies would be...

    Super Fast Carb?

How do you figure that? Are you saying a low FG going into the bottle is symptomatic of beers that will/may be gushers?

    1.070 FINAL gravity!?! Couldn't be.

I can't say for sure, I think when the ABV gets up there it might be too 'shocking' for the yeast and it may or may not work. From my understanding though, adding them straight from the tube is almost assured not to work, maybe adding from a starter when the yeast are in consumption 'mode'.

    08-08-08 Russian Imperial Stout Exchange

Too late? Sorry I missed this, a friend did this with his stout and a few months into it the beers are fine so far(no overcarbonation). He used a fining agent first though, before adding the campden tablets. He then 're-yeasted' and bottle carbed, but of course the BMBF should work fine...

    1.070 FINAL gravity!?! Couldn't be.

You can force carb and bottle, but ideally the yeast are still alive/healthy enough to eat that final bit of sugar at bottling and carb it. If those(WWS&120) beers are bottle carbed, I believe so, the beer/yeast wasn't 'stuck'. The yeast fermented all the fermentable sugar and then were able to...

    Temptation Clone

Mike's update on our beer; http://madfermentationist.blogspot.com/2008/02/temptation-clone.html He is very kindly babysitting my half along with his, and assures me that one way or another it will make its way from D.C. to my new home in West Palm. Its a little over 4 months old now, so its...
