    I know that bulk aging, you want as little head space as possible to prevent oxidization. Sometimes it doesn't always work out that you can easily do this. My question is, can I just purge any oxygen out of the carboy using my CO2 tank and be ok, even if the carboy is only half full?

    The great part about the Gorilla racks is that the wire shelf comes in two halves. You could leave the wire rack off of one half of a shelf and put a heating element (floor stand gas burner or mount an electrical unit) in the void. It's all very customizable.

    Thanks Bearocalypse! I'll check it out. Do you buy from The Shady Lady, or are there other resources here in Pensacola (or close by) worth mentioning? IMO The Shady Lady's prices are pretty inflated and I'm not sure that the prices are all that great even after consider shipping costs.

    Mead question: head space?

    I've done batches of mead using White Labs Super High Gravity Ale yeast (WLP099) with amazing results. This strain is quite happy in the high gravity musts that you'd see in a mead and ferments out nicely in the mid teens to low 20's in alcohol percentage.
