    It's considered a hybrid I believe. If you try to ferment it at cooler lager temps, you may not get a very good ferment (this is my guess based on recommended temps from Whitelabs). And vice versa, you want to stay on the cooler range of ales.

    Should I transfer my Saison or should I wait?

    Hmm, I have had a different experience with saison yeast, specifically WLP566. I ferment hot, around 80, and it chomps the gravity waaaay down in just a week. My last saison went from 1.07 to 1.006 in 6 days. Had a great funky flavor.

    Thanks for the ideas. I ended up pouring about half of the entire slurry into a mason jar and then pitched that. I have an enormous amount of "stuff" on the bottom of the carboy, but fermentation is well under way.

    Hop bag the pumpkin?

    I am playing around with the idea of brewing an Oktoberfest with pumpkin. It sounds like the best method is to mash with canned pumpkin. However, that method comes with the cost of a difficult sparge. Has anyone tried putting the pumpkin in a grain or hop bag and throwing that into the mash?
