    Advice to Newbies

If you've made 200 gallons and make beer 99% of the time, I'd like to know what those other two gallons were.

Campden instead of a boil? Please help

I have made due with my stovetop for two different ~5.5 Gal AG batches. One batch involved filling my 3 gal pot with 2.7 gal wort and my 10 gal with about 5. Boiled less than vigorously as the small pot was on a small burner and the larger one spread across two inadequate burners. I had a decent...

    Boulder "Shake" Chocolate Porter

Had this a couple weeks back on nitro and thought it was great. I really don't have much to add except what's available on their site. "Shake Chocolate Porter Our twist on the traditional robust American Porter, Shake Chocolate Porter is dark black in color with rich, sweet aromatics and...

    Disaster Brew

You seem like a smart enough guy so this should just be an awesome story in a year or so when you're turning out great batches. If you're willing to go through what you did there and still pitch yeast at the end of the day, you'll be in heaven with proper equipment. If you need some direction...

    Best Thermometer

+1 for the Thermapen, I got mine for $75, w/o warranty, in an "open box" sale a couple months back. You could also test your current thermometer against boiling water (adjust for altitude) and an ice bath for accuracy.

ISO: River Horse FT: Chicago area beers

It wasn't terrible, I just had the dipa last night. But I'd rather have a shirt. Hippos and beer just go together, it's impossible to not buy that ****, good luck man.

    Attenuation

You should take a measurement with a hydrometer if you can now. As I understand alcohol and particles will throw even a well calibrated refractometer off.

    Game of Thrones

Don't watch the show unless my sister is splitting one of the Ommegang bombers with me. Can't comment on the show but the beer has been good.

    Stone "Go To" IPA

That oniony hop flavor seems to be very palate specific. I find it and can't stand it in some IPA's, I mention it to other people I'm drinking with and they look at me like I'm crazy. Some beers I've found that flavor in suddenly, and then the next batch, it disappears. It's my opinion that the...

Filtering and or cold crashing and bottling

There are many ways to get clearer beer when bottle conditioning. The most important might be your racking technique, avoiding trub will mean little sediment in your bottles. If you're getting so much sediment that you have to leave a full oz or two in the bottle, you're likely picking up a good...

    Nine hops?!? Is it possible?

Shmaltz brewing has used at least 7 in two different IPA's. One was a 7 Hop, 7 Malt, 7% Black IPA that was surprisingly good. Hop Manna also was brewed with 7 hops I think, but the website now only lists 6. I'm pretty sure this one takes the cake though, 17 different malts, 17 hop varieties and...

    Why is my beer flat??

Just wait it out. Adding more sugar could be dangerous and likely isn't the solution. Like yooper said higher alcohol beers tend to take longer to carbonate as the yeast is a bit tired or stressed.

    What happened was...

When you did your recipe were you inputting a known efficiency from previous brews (with the same crush) or using the default? Also considering your SG was estimated with 2.75 gallons and you soaked up or evaporated slightly more than expected your wort is a bit more concentrated...

    Aging Beer for a NOOB

If you've never had purposely aged beer before I'd recommend one of two things to start out. The slow way would be to buy a case of something that ages well, big stouts and barleywine's being the most common. Taste fresh, and then continue pulling them out on occasion. Once a month is a good...

Double IPA Victory Dirt Wolf Double IPA Clone

Curious if the hops you used were pellet or whole? I usually assume pellet but knowing Victory is adamant about the whole flower I had to ask. I would love to take a shot at this clone recipe myself in the near future. Thank you for sharing.
