    Amoretti craft purees

I've had good results with the passion fruit concentrate from this company https://www.perfectpuree.com/ Some of their flavors are purees and some are concentrated juice.

    All-Grain Setup

Like LittleRiver said, it would help if you clarify your goals. You said you want to move from BIAB to all grain, but BIAB is an all grain technique. So are you really doing all grain now, or are you actually doing extract batches plus steeping some grains in a bag? If you are already doing...

FG high, stuck fermentation or just the recipe.

Lactose is about 35 ppg so would only account for about 7 extra gravity pts in a 5 gal batch. 1.033 still sounds on the high side for a 1.078 stout with 05, maybe you mashed on the higher end?

    Getting Creative With Recipe Kits

Well I'd use none as I don't really care for it. I suspect it's strong enough to come through with a small amount though.

Using sugar to prime in keg?.

You can absolutely do this, it's not that uncommon. As you mention some folks don't have room or enough lines to carb all their kegs, some folks want to save Co2 for dispensing. I commonly do it on fruited wheats with juice, it cuts down on total grain to glass time as I transfer directly to...

    Getting Creative With Recipe Kits

Looks like the kit has you adding 2c of fresh watermelon juice, which is about the ratio I use for my watermelon wheat every summer. I also like the same recipe with passion fruit juice but be careful with quantity - it is way more potent and tart than watermelon. I use a little less than half...

Help with force carbonating a 2.5 gal keg

The charts still apply for setting your carb level. In theory a smaller keg might have more relative surface area so you'd think it would carb faster, but in practice I've not noticed a significant difference in the time it takes to carb a 2.5 vs a 5 gal keg. You could do what you plan, though...

Learning curve from recipe kits to more advanced

For me it was getting into recipe making that got me hooked. Many yrs ago I got a beginner's equipment set and made maybe 8-9 kit batches but it didn't really capture my attention very long and I gave it up for a few yrs. Then after doing a brew on premises at a local brewery I got interested...

    Sparge water additions

What was the whole recipe including the AA% of your EKG, boil volume, and final post boil volume? Depending on the AA%, handling, and age of the hops you could just be under-bittered, especially if you have a small boil volume and top off with water. You might get more responses in the recipe...

    BIAB first timer

Wow, did you dump it already? If I'm reading your timeline right your first taste test was only 2 1/2 wk from brew day. Unless it was an overwhelming infection or something I don't think I'd ever bail on beer that early, especially if you suspect it's acetaldehyde which we know is often due to...

    Kettle size

For most grainbills that's likely going to be too small for a full volume mash if he wants 5 gals finished. He could do a dunk sparge though, in a bucket or second pot.

    Post to Beginners, READ!

I'm on board with the recommendation to do some basic reading up front. After that I think my best piece of advice is take all advice with a grain of salt. :D There are lots of ways to skin a cat with brewing. If you want to start with extract and focus on fermentation first, do that. If...

    Smaller(er) batch BIAB Bag

The 5 gal paint strainer bags are usually not wide enough at the opening to line the pot so I don't like them because you can't really stir. I use these bags for my 3 gal batches in a 5 gal pot, fits very nicely without a whole lot of excess. I'm currently on about batch #20 of the current...

First time making starter, have a couple questions

You mean you only cold crashed 2 hrs then decanted? Yes you likely had a lot of yeast left in suspension. After cold crashing the starter beer should be clear and you should have a dense layer of yeast at the bottom of the flask.

Cooling your wort - a tip I got from a pro

You shouldn't have to worry about infections topping off with tap water but you should still treat for chloramines. I put the top off water in my sanitized fermenter with campden, then put the whole thing in my keezer to chill while I'm brewing.

First time making starter, have a couple questions

I'd do a 1L step then a 2L step. Each step should finish pretty quick like in 18 hrs at those innoculation rates so you might shave a little time there. I've never not crashed and decanted between steps but I guess you could try that. Or just crash for a shorter time and decant most of the...

Cooling your wort - a tip I got from a pro

^This. (Edit - sorry was referring to kh54s10's post) You're not going to get all the way to pitching temp just with cold water. Your immersion chiller will do the first part of chilling fast due to the greater temp difference. It's the last 30 degrees or so that takes a long time and where the...

First time making starter, have a couple questions

What OG beer are you making, are you sure you need 2 steps? Using calculators with Kai Troester's stirplate numbers (yeastcalculator.com or Brewer's friend) I'm getting 330 billion cells with a single 2 L step, which should be good enough for 5.5 gals of 1.090 beer. Re your planned schedule a...

    Batch size

That's the problem, isn't it. Some folks use the post boil volume, others what they expect to get packaged. Unless your efficiency exactly matches that of the author you're going to have to adjust the grainbill for your own system anyway. Might as well get used to just looking at percentages...

Where do you mill your grain?

Unless you're milling grain near already boiled and cooled wort I can't see how it would be an issue.
