    Home method to gauge AA%?

    Think I underpitched my first lager...

    My first lager, an Oktoberfest, I pitched 1 wyeast pack, no starter. It took quite some time to actual start fermenting. However, it started and finished just fine. The beer came good, it just took longer. My advice is to just give it time to do it's thing and you'll have good beer. HTH...

    The key to balancing the banana/clove is pitch rate and fermentation temp. Given your target, I would under pitch just by a little and ferment at around 70 degrees. Lower pitch rates will cause the yeast to multiply more, hence produce more banana. Over pitching will give you more clove...

    Your first approach is fine. Getting the wort below 80, before oxygenating it avoids oxygen binding to the wort and causing hot side aeration. Your comments in #2 are correct.

    I think it's a Stinkbug also. They seemed to like/feed on the lupulin. I've also noticed them on new blossoms. I think they are turning the cones brown. I've declared war and am picking them off.
