    First brew help

    You can keep it in your plastic fermenter for months at a time with no problems. You pose more risk of infection racking to secondary than just leaving in primary. I stopped using carboy a altogether.

    Thats great, all sorts of power there! I hope your service is big enough. If your kettle is thin stainless you can punch it with a 1-1/4 punch...have the electrician do it for ya while hes there. If its thicker alumnum or a keg I think your better off using a step bit, again up to 1-1/4...

    I dont want any additives except ascorbic in the juice I use for my Apfelwine. Also I do indeed boil off one gallon with no issues.     Mounting elements

    No...I just punched out the whole and welded the nut to the kettle. Then I welded the inside. A food safe weld has to be completely sealed so that nothing gets in between the kettle and the weld. If that happened it could become contaminated. Its a simple job that most any welder can do...

    I prefer using NPS nuts. It's cleaner and nothing hanging in or out of the kettle. You just have to make sure you always have a few extra gaskets on hand.
