    flush the bag with hot water, but squeezing the bag can cause unpleasant off flavors. i learned this lesson the 'hard way'. i thought i was getting the most bang for my buck out of my grains, but i was releasing compounds that should not end up in my brew. flush don't squeeze.

    i would give it at least another month in the bottle. conditioning is key. i had others taste my first stout at 2 weeks, 4 weeks, and 6 weeks. the most recent review has been the best...so i'm looking for two months to be the key on mine. give it some patience. put it in a box in the back corner...

    +1 on the 6.5 with blowoff. i did primary 4 gallons of a red ale in my 5 gallon carboy...boring. using it now for secondary. smburnette, that's a great pic.

    happened to me last month. make a blowoff with any tubing you have and then you can switch back to an airlock in a couple of days.

    thanks for the encouragement. my current stirplate is attached to my shoulder, but i give it a whirl whenever i walk by it. your mention of ryepa reminds me of founders red's rye...an amazing brew. would clone it if i could/can. how many oz of citra in the ryepa?

    i just suffered through 4 bottles of bells 2 hearted to begin my first commercial harvest...started with 2...thought 3 might be better...had 4, why not 4? mixed the 4 with 4 cups of water, 1 cup of dme. i will update in a day or 2.

    i freeze a gallon in a big sanitized bowl. on my last brew day, it took less than 20 minutes to get my temp to 70.

    it's kinda like a puzzle. the racking to kettle on top of the priming solution and then trying to rack with the filling wand will be a job. it is possible, but you might get really frustrated. racking twice (from primary to kettle to bottling bucket is not a bad idea...if you do it...
