    Well, here it is after a day. It looks super thick and creamy... like maybe too much yeast at this point. Maybe i will crash it and then build one more fresh starter the day before brewing (this Friday). Pretty much guesswork at this point. I feel like there is tons of yeast in there.

    I am also using an eBIAB system and have been dabbling with incorporating LODO processes. I have created three beers using these concepts with good results. I also noted a very malty smelling, clearer wort and a very white cloudy break that took forever to fall (for whatever that's worth)...

    Define "smells good". I just made a starter from some 3.5 month old harvested WLP830 that was in my fridge at 34F. Visually it looked white and creamy. Upon opening, there was a slightly sour but yeasty smell. It didn't smell like a fresh vial but it also didn't strike me as bad or foul...

    stone > steel but i have done it both ways and not noticed much of a difference.

    If it helps; I do 550F convection, 5 on top stone and usually right around 2 more on the lower steel just to crisp the crust bottom.

    Even if you naturally carbonate in the keg to avoid force carbonating; wouldn't putting it on gas for serving eventually introduce oxygen anyways?
