    It works for Gordon and not you. Also the mashout method of steeping dark grains I believe is from Guinness not Gordon. I agree with Martin this technique depends on the recipe and what are your goals.

    For a Schwars using husked dark grains I think it's a good way to smooth it out, Sinamar or using Carafa Special is my go-to for this type of beer and checking mash pH.

    Hard to describe it as peachy but I always found the esters of US-05 a very common trait of homebrews back in the day, I always avoided using 05 and use liquid strains to get more clean flavor profile.

    Is there a picture of the mashcap used on mashing? I see the mash cap looks like a false bottom filter not sure how it seals to avoid HSA

    I liked this idea from the other lodo forum, it is quite a challenge finding a light kettle cap that floats and fits nicely in my kettle. I saw these sous-vide balls available in Amazon that are cheap, maybe i pull the trigger to use them on my mash and post-boil.

    I thought Baltic porter was a version of imperial stout (Imperial Porter Stout) that originated in the Baltic region in the 19th century.     Yeah subtle esters are similar to wine, it's been a while since I used this yeast, but I'm not sure if it has similar tasting notes nowadays.
