    My first guess would be sanitation. Something is not finding all the way. Could be any step: mash, boil, or transfer. As you are using glass carboy, which I assume are meticulously rinsed, I would look to any plastic that comes in contact during the process. Also, did you do these recipes back...

    I would give it one or two more days, checking the gravity once each day. Make sure it has stabilized. I have never bottled in less than two weeks, just me. Also give the beer a little more time to floc out for clarity sake. But you"ll be fine either way I am sure.

    I tweaked the hop addition. I'd have to check my notes for other tweaks (mash temp, etc). Also I did add one lonely ounce of biscuit, just to give it character, who knows!? Went late with the amarillo and used perle for the bittering. I will carb it to meet American premium later volume.

    No problems yet with Amarillo here in Denver yet. I brewed a version of this, a couple minor tweaks to make it a little more lager like. Used us-05 at lower temps. Still in fermenter, will bottle Friday.

    Yeah no prob. I plugged in 60L too, but that can add a fruity sweetness (not unpleasant, but wrong for this style), but you work get almost 10 srm while the 40 will get ya 7 and change, where I like my pales.

    Good. Yeah. I normally just 3pc airlock it, but my Amber woulda blown her top, so glad I did. Even with the blowoff it filled the pint mason jar and overflowed that before I caught it!! I think I am getting to the point where I will just always use a blowoff, just in case.
