    I'm going to agree that any significant hop amounts are going to obscure spruce tip flavor. I'd consider a wheat beer as a base instead. Or saison?

    I have done this. No issues. Surplus of buckets + cheap bastard = bucket with spigot. I consider fermenters to be semi disposable anyway. Good for about 40 batches, and then there are enough scratches that I worry about infection.

    Huh, I always just use a wire wheel on the cast iron. Usually only when I get a "new" one from garage sale. Other buildup over time is just seasoning!

    What should the washer look like?

    When using the fiber washer, you need to CRANK the nut tight to the tank the first time. You are deforming the fiber washer in that operation to conform to the ridges in the tank orifice and the regulator body. I have used both fiber washer and nylon washer. Nylon is easier to set up, both work.

    I condition when I'm weighing out grain. I spray the grain as I pour it from bowl to bucket. I used to measure the water, now I just spray until I've moved all the grain.

    Best digital thermometer

    I have a CDN thermometer with a wired probe that I have beat the snot out of and is still working. I've dropped it in my mash tun, spilled all sorts of crap on it. Just keeps going. Probably not as fast as the thermopen, but it's only $30ish.

    Must you bottle exactly at the end of fermentation?

    Your beer will be totally fine whenever you bottle it. I'm going to say that you won't notice any temperature related off flavors and you will go on to brew many beers and flout conventions like fermentation temperature and time length repeatedly.

    Anyone got an approximate evaporation rate for a 10 gallon Bayou Classic?

    I have an 11 gal Bayou Classic with 5500 kW electric element. If I want to reduce volume at high boil, I can get rid of about a gallon in an hour. I'm thinking max boil with my electric element is more vigorous than max with flame. If I'm just doing my regular hour boil, I only lose maybe .4...

    What I did for beer today

    That sounds drastic! I just bottled a wee heavy (non traditional with 1/4 lb cherry smoked - I like it that way). Popped into my dead kegerator for temp controlled carbonation with the heater.
