    What Grains do you keep on hand all the time

    Home Depot buckets with 2 row, pils, maris otter. I buy specialty grains as I need them; LHBS is 10 min away.

    I'm tired of getting screwed on "outdated" CO2 tanks

    Find a fire extinguisher recharging outfit - keep your own cylinder and just refill it. Recertification is still annoying, but predictable. My shop only charges $15 to hydro test. You are totally getting hosed by your LHBS on that.

    How long an Extract Brewer?

    I went all grain for economics' sake. Now that I've owned the equipment for a while, a brew day costs me around $20 and takes 3ish hours (electric). A little more cleaning than extract, but a win in my book.

    I'll agree with this. Apply the heat where you actually want it. My fermentation "chamber" is a reptile heating mat, temp controller and reflective pipe insulation cut to fit. Bonus: it folds up.

    Sorry I can't help there. I never actually buy beer. Done right, this is a roasty treat, coffee and chocolate notes. Depending on yeast, can be dry or not.

    ferment chamber - space heater...Safe??

    I think it's crazy to have both your heat and cool plugged in for temp control. If it's winter, I just plug in heat. Summer: chill. I'm not convinced you need to keep temps to the nearest degree.
