Excellent sweet cider results with Pacman yeast!

Halfway through our 2nd gallon of sweet bubbly cider and it couldn't have been easier! Added Pacman yeast to refrigerated cider from local orchard. Kept in original milk jug style bottle and in fridge not really expecting anything, but about a week later noticed it had fermented. Went from...

Questions About Yeast Harvesting From Commercial Beers

I have had good success with 1.020 as the first step. Then 5X steps of 1.040 has worked well. Don't forget to oxygenation of some sort.

Can I patch a broken carboy?

Hope you're kidding about the safelite idea. Just in case you are not, a car windshield is laminated. It has many layers that are not even glass, so repairing that is nothing like your carboy. Pitch the carboy.

does O2 throw off refractometer reading?

Yes, I had so much foam in the fermenter all my attempts did have bubbles on the prism. So, bubbles on the refractometer glass is no good?

does O2 throw off refractometer reading?

I got an unexpectedly low reading on my refractometer that I would like to reconcile. This was my first attempt at a partial boil. I started with approx 11.5 lbs LME in an 8 gallon kettle. About 5 or 6 gallons of wort into the fermenter. Refractometer read 1.086 which seemed about right...

Store extract or brew it and store the beer

I have been planning a 1.035 session 20 IBU beer, I want to first drink through several months of inventory. My extract is already about 3-months old and I will be storing it in a cool basement. Concerned about freshness would it be better to store my extract about 6-months then brew or brew...

1st attempt at bottle harvesting - single bottle of Rogue Hazelnut Brown Nectar

If it is still at 58F you might want to think about warming it up towards 70F.

    How do you aerate?

I am using an O2 stone from AHS similar to Williams but I had to craft my own wand from a racking cane. I am concerned that venturi gadgets or holes in the line are a sanitation risk when compared with other low cost solutions like shaking, sprayer, or paint stirrer. I slosh sanitizer around...

1st attempt at bottle harvesting - single bottle of Rogue Hazelnut Brown Nectar

Good project, glad you were so successful! Did I loose track of your step-ups or did you possibly under pitch?

Pacman progress my first bottle harvest

Yes I would expect younger to be better, but I could not find any date indicated on the Rogue bottles. It did have visible sediment. It is one of their lower gravity beers so the yeast might have been less stressed. To help your odds you can try combining multiple bottles.

Pacman progress my first bottle harvest

They just named it Hefeweizen, but the Rogue version of hefeweizen is not really much like a real hefeweizen. They listed Pacman on the bottle and my stepup starters had the characteristics of Pacman.

Pacman progress my first bottle harvest

Here we are about 12-hrs after pitching half our Pacman starter into a national Homebrew day brown IPA. It is going well at about 60-degrees. Saving the other half of our Pacman for future brews.

anyone that uses austin homebrew see this?

Even though there are lower cost options, I have been planning a bulk DME order from AHS specifically due to the free shipping. $5 is still not much for something so heavy, but now I'll make an effort to actually compare a few prices.

    Opening New Jersey BOP?

Not sure we even have a Homebrew store out here in Hunterdon / Warren, do we??? Like someone else mentioned... I don't get BOP idea. I might suggest opening a Homebrew store and then consider expanding into BOP even if only as a way to demo the high-end Homebrew gear.

Pacman progress my first bottle harvest

I wanted some extra for future brews I am planning, so I stepped it up to 1 gallon of 1.040. Cold crashed overnight this photo is after about 10 hours without any shaking or agitation. Quite active fermentation! after cold crashing this pacman yeast seems to be very gooey almost like peanut...
