New England IPA "Northeast" style IPA

Follow up on my Janish BYO experiment - malt edition I followed the Janish BYO malt bill (chit, malted oats & wheat malt) closely but subbed Rahr 2Row And added honey malt and less hops. It finished 1.018 which is what Janish suggested. Previously I just did the hop schedule which was too...

I have used Rapidase several times and cannot tell any difference. In all fairness Conan is my "go to" yeast... On the flip side, I think your earlier comment about using more hops to release more thiols is the next big thing. (FYI - The 100g jar of Rapidase is enough for 200gal at...

Two major things in Janish BYO article that is a departure from my norm - the 200/185 whirlpool for 10min each vs 180 turn off chiller then let naturally chill for 30mins; the other was the grist bill. Instead of trying both I split into two different version to trial first was the whirlpool -...

Here are a few of the most widely quoted research articles in NEIPA world. Stan H & Scott reference these a lot. The other one of note is the Kishimoto thesis. A lot of what you see from him can was originally in this document...

In addition to Shellhammer, if interested in more modern HOPS research here are the ones to look for. Add Daniel Sharp to that list too - check out his phD thesis from Oregon - good stuff. As @isomerization stated Scott doesn't do scientific research, rather he reviews the published data and...

Check these slides out from Boulevard in 2016 about dryhopping - Cold 38F / Warm 68F Dryhop at 4P vs FG vs double dryhop 1lb/bbl (~1oz/gal) vs 4lb/bbl (~2oz/gal) Slurry dryhopping (test) vs just adding pellets (control) FYI - Homebrew process - add beer to dryhops then inject...

    Introducing… the Spike FLEX!

Fedex made the drop about an hour ago - cleaned it up all nice and shiny and had a batch of pilsner waiting to go in it. Thanks @SpikeBrewing !

It comes with a 5lb spring. I bought the optional 20lb spring from norcal. FYI - it is the same spring as the ones in the universal poppet replacements on amazon.

Yes - trub has a fining effect on the beer. Positive / negative ions --- a bunch of chemistry stuff and research has shown this. I don't remember the papers/links but I think Janish has some stuff on it. Plus if you look at the pics on the brulosophy exbeeriment the trubby beer is noticeably...

Not sure about the nitro vs vacuum seal. I only do it because all of the hop resellers (yakima, farmhouse, hop heaven, etc) purge with nitro and then vacuum Dry hop just as you describe - under pressure. I currently use Speidel with the norcal gas/prv lid with 20lb spring shown below...

    Best NEIPA hop combos

I did soemthing similar before - motueka, waimea, rakau, kohatu. It was super limey - made me think it was a corona flavored neipa. I enjoyed it as did everyone that drank it. Careful with the waimea it is potent bittering hop.

Strongly agree - oxidation and vegetal flavors galore there friend. If you cant get clean wort from the BK you could always go old school and dump it all fermentor A like the picture, stick in fridge overnight to get it in 50’s to drop all the crap to the bottom then use siphon to transfer the...

    Introducing… the Spike FLEX!

Count me in on the Flex+ - I just purchased two FYI - @jaymosbeershack I use the jaybird yeast harvester to dryhop in a modified Speidel with triclover - it works great! Just make sure there is minimal pressure in the fermentor as the mason jar rings blow off threads easily with pressure over...

New England IPA "Northeast" style IPA

This is so true - I have done it with multiple commercial brews. I think it is Old Nation brewing that has label that recommends swirling can to agitate stuff back into solution. Accordingly, I have the CBDS in all my kegs, if the flavor starts to wane I swirl the keg a bit to get all of that...

Protein flocc out pulling hop oils out too - this is a real thing and very likely part of the issue. According to research that Janish cites you should used malted instead of flaked adjuncts (wheat malt, malted oats, chit malt instead of flaked barley). The flaked stuff is full of high...

New England IPA "Northeast" style IPA

Consider these that I have done - maybe one or all will help (I do all of them now). My NEIPAs stay fresh with solid aroma up to two months and I spund. Hop pellets have lots of crevices that hold air, try putting them in ziploc and flush with nitrogen, not co2, then seal bag and hold for a...

New England IPA "Northeast" style IPA

It seems to me like the author is trying ti validate their choice to bottle vs admitting that kegging has lowest risk of oxygen ingress. Think about it logically. Purge the keg of o2 with fermentation gas, purge the transfer line and trash first fill so that “virgin” beer in it then fill...
