    I let the beer sit in the keg for a few weeks, and the off flavors have seem to gone away. Good tasting beer now.

    I was concerned about moisture freezing and thawing the grains so I opted to put them into a sealed bucket before freezing to limit any moisture pick up from the freezer itself. After freezing them for a few days I pull the buckets and store like normal.

    Get the inkbird the bayite is junk in comparison. The hor rod stick will aid in boiling too, and I doubt the sous vide will get up that high in temp. Could be wrong though.

    Do you have a compressor delay set up on your temp controller? Maybe due to the heat it is cycling power too often.

    I spray io star in my freezer section every few months to fight mold. This section rarely gets used, but my fridge is energy start rated and barely needs to run.

    If you water heater is down stairs near the brew room you may consider a bib to run hot water and cold water directly to your system.

    Use starsan or iodine instead, and one hose on both end to keep it in the cfc. Then you won't have to worry as it will stay sanitized until used.

    The real solution is to obtain a pump and recirculate your mash. Preferably through a heat exchanger in your hlt or kettle to help maintain stable mash temps.

    If you have an immersion chiller you can run your wort from the tun to the pump to the chiller placed in kettle with hot water and back to the tun. This will keep the temps close to the same and should help keep temps stable. You can run the pump for the entire mash this way.

    Well if you are recirculating your mash, then your temps should be stable enough despite head space. If you are not recirculating, then yes, you will lose heat from the larger head space.
