    Man, my best homebrew to date. Huge hop aroma and nice juicy profile. I went with Citra, Simcoe, Amarillo, Cascade and Chinook in the whirlpool and dry hop based on what I had. Would like a little more body from the malt but this is still awesome. Would love to have real Heady to compare it to.

    Want to get a starter going tonight for a Sunday brew (plan on a two step starter to harvest some for future batches). Whats the optimal temp for the starter. Do I need to be in the mid-60's like primary fermentation or can I have this at room temp 74 for a couple of days?

    GF Hopped Cider Recipe Help

    Just bottled this. Real interesting flavor. Equal parts apple, beer and wine with a nice tart zip on your tongue.I'd expect this to have even more bite once carbed up. FG was down to 1.000, undercarbed in case the yeast knock it down another point or two.

    Foam while fermenting?

    Mine is still doing the same thing and I'm on Day 10. Used S-04. This has taken a lot longer for the yeast to drop than I'd have imagined. Krausen fell after Day 2.

    On day 6 now and after an obvious krausen from primary with the S-04, it looks like I've got a secondary fermentation going. Could this be malolactic fermentation?     boiled .5oz of Cascade in about a half gallon of honey wort. About a pound of honey used. Smelled quite interesting, like hoppy honey tea, and tasted fine. Added to carboy with 3gal of pressed cider. Its happily fermenting away with some S-04 right now about 12 hrs after pitching the yeast

    UPDATE: So I popped my first beer. Fully carbed, still smells awful. Straight up bandaids. Taste is fine if you can get over the smell. Damn. I don't know what to do with this, dont want to dump it.
