    Wait until after fermentation. Once it is ready to bottle/keg I add my spices for 3 days... if it is your first time taste everyday and cold crash or package once you have the flavor you want.

    mead is rather flat and tasteless

    You could also add some vanilla, adds some perceived sweetness. doing this with oak has worked for me.

    I would do a blonde ale, Scottish ale (can be dark but not bitter), red ale and a porter. agree keep it light and know the crowd.

    I have a 7 cu ft freezer from costco. Holds both my 6 gal and 7 gal fermonsters plus various 1 gal carboys.

    Wife told me to get a hobby.... I started brewing 1 gal batches .... continue to improve and get new equipment. Currently brew on the unibrau and making great beer

    Leave out the oak and bourbon and just do a porter? or play around with spices and do a Christmas porter ( no oak.... bourbon optional)

    Agree with all of the above as well. look at your set-up and where you want to go and then decide which steps to take. I went temp control then all grain then electric Within a year and each one helped improve my beers. After that came the kegerator which made Packaging so much easier.
