A friend of mine I brew with uses one of these with just a simple bazooka screen and the thing is a monster. Holds temp rock steady, fairly compact and damn efficient.

Not that it applies to me but is this country dependant? I mean the legal drinking age in Ireland is 18 same as the UK and most of Europe I'd imagine.

I think it mixes... Takes quite a while then the stout tap knocks it out of solution creating the cascade effect your seeing and making that creamy texture.

Glad you liked it! Living in Ireland basically every stout is on nitro. I would kill for a nitro kegging set up.

It's the propino strain of barley that's grown here in Ireland. Nice big fat kernels. I used it once but as I had speciality malt etc didn't get an idea of its flavor. I'm hoping to take a drive to the maltster some day and pick up a bag or two. It's incredibly cheap.

Brett won't sour your beer. It'll add a lot of extra flavours/funk but it wont sour it. I'd personally just add the brett to the primary carboy and let it go. Just split the batch in half into the two carboys for aging/fruiting, the beer will be well infected with brett at that stage.
