    Reissdorf Kolsch

Me and my friend killed this one last sat night, I was hoping for more flavor, but I found it to be very clear.

Best time to add acid malt?

Thanks Man, I'm gonna use that Kolsch yeast on my next pale, I hear it really lets the hops shine through.

Best time to add acid malt?

If I've brewed the same batch before and know exactly how much acid malt to add, when would be the best time to add it? I was thinking 5 or 10 minutes before I dough in the full grain bill to give the acid a chance to distribute throughout the water? or this is pointless, and I should just...

    Mead Hall, Cambridge, MA

Checked this place out today, very nice draft beer selection, burger was ok. Here's a couple pics I shot inside, and I stole a beer menu and scanned it. No Kolsch currently on any of the 100 taps, waah.

    Attenuation question

Are you taking your FG readings with a hydrometer or a refractometer? What does the hydrometer read with some distilled water at 60F?

Well I got the results from the Boston Homebrew Comp, here's a link to the 2 judges score sheets link to 1st score sheet link to 2nd score sheet Both judges definetly picked up on the sweet fruit aroma from the heavy late additions of the Crystal hops, one of the judges describes it as...

First time adjusting water; does this look right?

First I'll tell you if you post this in the brew science forum you'll get some real expert advice. I've just gotten into water chemistry myself and found the EZ Water 3.0 calculator to be the easiest to use, here's a link to that spreadsheet link to EZ water 3.0 I would think for a sweet...

Technique or practice that resulted in biggest taste difference

Adding a 2 oz 0 minute hop addition to my hop schedule has really increased my hop aroma and flavor, before I was only doing a 10 and 5 minute addition, but the aroma and flavor increase from the 0 minute has been huge. I also think increasing my chloride levels to 80 ppm with a 5 gram...

    Carapils

If you're concerned about using too much carapils, try a Uinta Wyld extra pale ale, the Wyld is 13% carapils, and its delicious.

    EZ Water Calculator 3.0

When I change the mash thickness from say 1.5 qt/lb to 2.8 qt/lb, I'm only getting a pH change of .01. From what I've read of Kai's work here link to Kai's work specifically looking at figure 2 on that page link go figure 2 I'm seeing a much larger pH shift in a 2 l/kg versus a 5...

American Amber Ale, 5.5% ABV, 35 IBU's, SRM 12, 10 oz. of Crystal hops in there, lots of fruity hop aroma that blends well with the crystal 75. I'm entering this one in the Bluebonnet Brew-off, and the Boston Homebrew Comp. my favorite batch by far.

Can you Brew It recipe for Uinta Wyld Extra Pale Ale

Hmmm. I don't really think of Munich 10 as a crystal. I'm sure it adds some sweetness, but I don't think you could compare it to a crystal 10. From what I've read, I'm thinking Munich is kilned at a higher temp then a crystal. I could definetly be wrong about this, I gotta read more.

Can you Brew It recipe for Uinta Wyld Extra Pale Ale

I tried this beer, the original not the clone, its fn awsome. I'm gonna brew this clone next. I couldn't believe it was 13% carapils, so I wrote an email to Kevin Ely at Uinta, here's what he said. "Hello Bob, Great to hear. You are close, it is actually 69% Organic Pale 2-row, 11% M10...
