    I pitched around 70deg. I ferment in a dark closet under my stair case. Temp stays consistently around 70.

    I pitched yeast in my APA extract batch, it was more than 60 hours before I saw the first bubbling in the airlock. I assume the beer should not be negatively affected by this? Have you ever seen this before?

    I have a batch of witbier that has been in secondary for about six months. I just opened the bucket, it smells good, but has more floaters on top than I am used to seeing. This could be a by product of the orange peel and coriander seeds, or a sign of a problem. Can it ferment to long?

    Agreed, the book was an unsolicited gift from my wife. I have brewed a few batches prior. The brew instruction they give is very basic. My interest with the book is only in the recipes.

    Checkout youtube tons of videos show step by step. Also, they show quick and easy, as simple as adding a packet of yeast to a bottle of fruit juice. Of course you get out what you put in. It would depend on how much space you have to conduct the brewing process.

    As I see it, the big three weren't big when they started. They were home brewers who made a go of it. They were sucsesful in creating a recipe that was favorable to people so they grew. They must have consistency to keep people loyal to their brand. Even if we like trying different brews...

    Yes, this will be my first all grain as well. I think I will try the small batch, then scale up if I like the results. Good luck, let me know which that you try and I will do the same.
