    Roger thanks for the advice. Ill have to do some one gallon batches since I've been doing extract with specialty grains and only have a 5 gal kettle. Ill have to research some simple recipes now!

    Nah he's a solid pick up for a back up. He has more than enough in the tank to fulfill that role. With the defensive core the Hawks have he just has to be decent. Would have liked to get him a tad cheaper but could be worse.

    Will probably take awhile for fermentation to take off but since its already all done with might as well wait and see, I've read lots of horror stories and while definitely not a good scenario... Could luck out.

    Only the bittering hops are in the DME. The flavoring and aroma hops will be added towards the end. So the bitterness will be the same no matter when I add it? I'm making a Scottish ale so the color doesn't really matter, gonna be dark either way.

    Fermenting too fast/blowout

    Let it sit another two weeks at least. Gives the beer time condition and the yeast time to clean up after itself. Time only helps beer :) oh and definitely get a hydrometer, then you'll really know when fermentation is complete, not likely after two days.
