    Funky taste

Just to follow up, I bought myself a bottle of Kolsch and guess what... Same sulfury notes in the smell and, to a lesser extent, taste! Must be the yeast & lack of ageing for my homebrew.

    Weighing DME

I got cheap digital scale (1g/5kg) for all my brewing needs. Works great. I've been using mostly DME for my latest brews and it will take you quite a while to measure 3kg of DME with cups =)

    Looking for a 6%+ abv

It is the difference between fg and og that you should be looking at. If you just want ABV, you can put a couple kilos of brewing sugar into the wort with any recipe and boost abv, however, that might throw the taste balance off (e.g. I recon you'll taste 8% alcohol in a boosted wheat beer or...

    Fg 1018?

I was fermenting it at ambient temp of 17C-19C using white labs yeast for the first week and a half. Then storing at ambient 18-20C. By the looks of it, fermentation has stopped a while ago but I don't have a history of gravity readings =( What are the chances of fermentation still going...

    Fg 1018?

Hi! I'm about to bottle a batch of rauchbeer made following a mix of these 2 recipes: https://www.homebrewtalk.com/f77/red-smoke-classic-rauchbier-384627/ https://www.homebrewtalk.com/f77/rauchbier-236623/ but using kolsch yeast. My FG reading is 1018 after 3.5 weeks in the primary...

    Hefeweizen and Hallertau Question

I only used 0.75oz of haller in my batch and at bottling time it looked like I could still taste some hops. I like it when there are lots of hops but decided to stick to the recipe and style. My batch was also very dark after boiling but lightened up a lot since then.

    First Blow Off!

Oh no, you just introduced me to blowoff beer porn!

    First Blow Off!

Thanks mike! Do you fit blowoff tubes by default for each fermentation?

    First Blow Off!

Mike - I assumed that it will just clear the blocked airlock if the lid is screwed on tight?

    First Blow Off!

Yep. Had my first blow off 3 weeks ago while fermenting a weissbier. And it was literally, a "blow off" as the lid of my fermenting bin blew off when the airlock got jammed and now there's a krausen stain on my carpet. I'm lucky its an old carpet and I'm planning to replace it soon anyway =)...

    Funky taste

Hi! I have just finished bottling my first 2 batches of extract with specialty grains and 1 partial mash beer (I have only brewed kits before). All 3 samples had the same strong funky off flavour. Quite yeasty, but also rubbery, with a bitter aftertaste and rather krausen-y. All batches...

    Too much priming sugar

Apologies for incorrect temp advice! Re lifting the caps, in theory there is a slight risk of infection but I had no problems with my batch. You can spray the opener and the caps with star san if you're paranoid.

    Too much priming sugar

I had the same problem recently and I solved it by letting the gas out on the 2nd, 4th and 7th days of carbing. Assuming you were bottling at 20C, http://www.tastybrew.com/calculators/priming.html shows that you're around 3.5 vol Co2. Just entering the risk zone. Just slightly lift off the...

    Fermenting in oversize Carboy

I'm only a beginner, so I might be wrong, but I'd guess that Co2 will fill the extra space so there should be no issues there. I was thinking of splitting batches myself, so would like to see what the pros say.

    Coopers Wheat

Hi, I've brewed a Coopers Wheat before (was my second batch ever) and I went with: 1 can of coopers wheat 1kg of brewing sugar 0.5kg of wheat DME. I'd guess that the beer ended up in ~4-4.5% so maybe going with 1kg of wheat DME will give you a stronger beer. I bottled at 4 vol CO2...

    Should i bottle?

I'd also suggest throwing the kit instructions away. They've never done me any good. Primary fermentation: 3-4 weeks; Ageing in the bottles: at least 3 weeks (except wheat beers or very hoppy beers imho - they are fine once they are carbed). The only way I learned to wait for so long was...

    Priming minikegs

Thanks guys. I'm buying a CO2 system so hopefully a tapped keg should last a month or so. Ster, how do you vent the mini keg? insert tap, turn the keg upside down and let the gas out? PS One of the beers for the party is a wheat beer that should have high carb level. Should I leave that...
