    I would suggest using a disconnect and blow off tube on the gas post instead of the PRV.

    First, I am not a winemaker. However, a Google search seems to identify that as an amalgamated cork, suitable only for decorative purposes. I wouldn't use it to bottle.

    HB cider. Some more glassware I liberated back somewhere between.'78 - 80. Don't see this style of glass very often now. In the day, it was very popular for .25 beers at the ubiquitous Wisconsin neighborhood tavern.

    Adding ginger to cider

    Make ginger tea and add that to taste. I have made non alcoholic ginger ale by simply steeping grated fresh ginger in 170 degree water. Works great, you can make it as strong as you like. I do about 2 lbs in a 3 gallon batch. You would want to be stronger to avoid diluting the cider.

    How long can i leave it in the fermenter?

    A couple months should be fine. If you're nervous about that, you can rack it off into the serving kegs so it's off the yeast, and then store it however long is appropriate for the style. You could even add some sugar and carb it if you like.
